A Coconut Butter Friday

What better way to head into the weekend then by making a jar of coconut butter?

Emily helped me use her food processor this morning (my first food processing experience ever! can you believe it?) to process the bajeebies out of some coconut until it turned into delicious liquidy goodness. Now it’s in a mason jar to cool and set up…though I can’t imagine it’ll last there for long (I already had to sneak a little out early to use for a tasty pancake topping)!

(Side note: I love mason jars. When I was growing up, my mom always kept jars of green tea in the fridge so you could just grab one and go. When I moved out I started making them for myself. One day at my old job, I brought one with me to have at my desk, and one of my coworkers stopped to ask me if that was a jar of pee that I was carrying around. It had never occurred to me that perhaps other people didn’t use jars the same way I did…)

Funny timing -- I have been living off of Buckwheat Bakes (from The Edible Perspective's blog) since going off gluten, and this morning I slathered my bake with coconut butter and it was *incredible*. It tasted like frosting!

I have made coconut butter at home before but it actually burned up the engine in my food processor. oops. :)

Yes! I love how it hardens

Yes! I love how it hardens like icing. So tasty! I definitely had my doubts about the food processor surviving that adventure, though... :)
